Bon Appetit has long been committed to sustianability. In 1999, Bon Appetit made a commitment to require chefs to buy at least 20% of their ingredients from small farmers, rancher, fishes and food producers within 150 miles of their kitchen. In 2001, they worked to create innovative disposables, such as the compostable containers we have on campus Recently, they banned plastic straws. They have also fought antibiotic use in their farm animals.
